These Pumpkin Einkorn Donuts will warm you up on a cool fall day and the smells of fall will fill your home. Every year a trip to the pumpkin farm is a fall tradition in our family. We load up the pumpkins and gourds. Our truck is packed full , some to carve, some to just add to our fall décor and LOTS to roast and preserve. I hope someday we have enough room on our little homestead to grow our own.

Why Einkorn?
When we started on our whole food journey , grains and flour were one of our first big changes, We came across einkorn flour and has LOVED it ever since.
Einkorn is an ancient grain and has many healthy benefits. Einkorn has less gluten than traditional whole wheat and has far more nutrition. Its a good source of protein, fiber, B vitamins and many antioxidants. When traditional wheat is processed , many nutrients are stripped out and refined. Einkorn has been found to be a more nutritious grain that has very minimal processing. Einkorn is also known to be more lighter, more digestible and taste so much more tastier than traditional wheat. Our family loves it and can’t imagine using any other flour.
Pumpkin donuts are fun to make and kids love them.
These pumpkin donuts are baked and dairy free with coconut oil, fresh pumpkin puree, pure maple syrup and warm fall spices.
Pumpkin Einkorn Donuts(Dairy Free)
Here’s what’s in these moist and warm pumpkin donuts.
- 1 cup einkorn flour
- 1 tsp baking soda
- 1tsp baking powder
- 1 tsp pumpkin pie spice
- 1/4 tsp sea salt
- 1/2 cup pumpkin puree
- 2 eggs
- 1/3 cup pure maple syrup
- 1/4 cup melted coconut oil
Lets put it all together.
1.Preheat oven to 350 degrees
2.In a mixer or large mixing bowl, mix coconut oil, maple syrup, eggs and pumpkin puree. Mix until well combined,
3.Add flour, baking powder, baking soda and pumpkin pie spice. Mix until all combined.
4.Spray with a nonstick cooking spray a donut pan and fill each with donut mixture. Bake for 8-10 minutes or until lightly brown. Let cool and pop out of pam onto a plate.
Add a topping or enjoy them just the way they are!
A cinnamon sugar topping can be made by adding cinnamon to raw organic sugar or coconut sugar. Dip the donuts onto a little melted coconut oil or butter to moisten and then dip onto the cinnamon sugar mixture.
These can also be dipped in a chocolate glaze or maple syrup glaze. Enjoy!

Yummmm!!!! I still think about the donuts we had several years ago. And they ARE so super moist. I’ll have to come back to this one weekend and make it with my boys. And give Einkorn flour a try.
