
Growing up peanut butter cookies were one of my favorite cookies and remember big batches were made when I came home from school. I think I could smell them before I even made it down our driveway.
When dairy allergies hit our home , this mom was on a mission to make all the same goodies we love but just a little different. Even though we don’t have a a specific gluten allergy in our home, we all do have immune disorders that gluten is not the best for.
Over the years, I have made several different kinds of peanut butter cookies, but I have to say these peanut butter cookies,, are by far, MY FAVORITE and they don’t even have flour or butter, WAIT! NO FLOUR? AND NO BUTTER? Yep, you read that right and they are AMAZING!

WHAT YOU NEED TO MAKE THESE SIMPLE AND AMAZNG COOKIES
1 cup creamy peanut butter( natural is great, but make sure its creamy)
1/3 cup white sugar( we use organic raw cane sugar)
2 tablespoons coconut sugar ( or brown sugar)
1 egg
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup dairy free chocolate chips ( we use Enjoy Life Dark)
HOW TO PUT THESE COOKIES ALL TOGETHER
1. In a medium size mixing bowl add peanut butter and sugar and beat together with a hand mixer or stand mixer.
2 Add baking soda, egg, sea salt and beat until all combined and creamy.
3. Add chocolate chips and mix until all combined.

4 Roll balls of dough and place on prepared baking sheet with parchment paper.

5. Press each dough ball with a fork in a crisscross.

6. Bake in a 350F degree oven for 15 minutes or until lightly brown. Cookies will be soft but will harden as they cool.
7. Sprinkle a touch of sea salt on each and let cool for 5-10 minutes before enjoying for best results.
