Growing up we always to took a day trip to go berry picking, blueberries were my favorite. Picking those little berries off the bushes and getting lost in blueberries.

Since becoming a mom, this was our first year blueberry picking with our son. We were so excited to get out to a blueberry farm . I forgot how long it takes to fill up a basket with those little berries. I think we ate more than we picked.

We ended up with 2 big baskets and a busy afternoon preserving our blueberries and stocking up the freezer for baked goods and smoothies.

Smoothies are our favorite way to have blueberries in our home and this Coconut Blueberry Smoothie is my son’s favorite. Dairy free and so easy to make.
What You Need To Make These Dairy Free Coconut Blueberry Smoothie
-Blender ( we use a ninja high power speed)
– 1/2 cup unsweetened canned coconut milk( chilled is best)
-Frozen banana ( we keep our freezer stocked )
-Fresh or frozen blueberries
-Splash of maple syrup(optional)
and that is it!
Mix All Together
Super simple with only a few ingredients . Blend away and enjoy this powerhouse of nutrients and flavor.
Tip: This makes one serving , double the recipe for a larger serving size.
