These vegetables can be prepped earlier in the week when using fresh and taken out of the freezer shortly before making the soup. I make this on cold days when I want a quick and easy meal that my family loves.

WHAT IS ALL IN THIS HEARTY VEGAN VEGETABLE PASTA SOUP
2 medium carrots chopped ( or frozen carrots)
1 stalk of celery
1 small onion chopped
1 cup frozen or fresh green beans
1 large pealed tomato chopped or 1 can diced tomatoes
2 cups pasta of choice – cooked and drained
2 cloves minced garlic
2 cups vegetable broth
1 can light white beans (optional)
1 teaspoon Italian seasoning or fresh oregano
1 teaspoon sea salt
1 teaspoon of pepper
1 teaspoon olive oil
HOW TO MAKE THIS HEARTY PASTA VEGETABLE SOUP (stovetop)
1. In a large pot on medium heat, lightly sauté onion, carrots, celery, fresh tomatoes and garlic in a touch of olive oil.
2. Add green beans and white beans , stir until combined.
3 Add vegetable broth , spices, herbs , salt and pepper.
4. Simmer on low until all vegetables and beans are tender.
5. Add cooked pasta , combined well and keep on low until desired consistency.
6. Serve warm and enjoy with Homemade Einkorn Bread or Homemade Einkorn Biscuits.
Tip: This can be stored in an air tight container in the refrigerator for up to 3 days and stored in the freezer up to 3 months.
