REAL FOOD INGREDIENTS TO MAKE THESE HARVEST CARROT MUFFINS
1 1/3 cup einkorn all purpose flour
1 teaspoon baking soda
1teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon of sea salt
1/3 cup pure maple syrup
1/3 cup dairy free milk( I use oat milk)
1/3 cup melted coconut oil
2 eggs
1 cup shredded carrots – packed
1/3 cup dairy free chocolate chips(I use Enjoy Life dark)
HOW TO MAKE THESE HARVEST CARROT CHOCOLATE CHIP MUFFINS
1.Preheat oven to 350F degrees. Prepare muffin pan with nonstick liners.
2 In a large mixing bowl add flour , baking soda, spices and sea salt. Whisk until all combined.
3 In another mixing bowl add pure maple syrup, coconut oil, dairy free milk and eggs.
4. Pour wet ingredients into flour mixture and combine well.
5. Fold shredded carrots into mixture and add chocolate chips.
6. Pour batter in muffin cups, sprinkle with a touch of raw sugar and place in preheated oven, Bake for 20-25 minutes or until toothpick comes out clean.
7. Place on cooling rack and let cool before serving or enjoy them warm.
Enjoy these muffins for up to a week on your counter and can be stored in the freezer in am airtight container for up to 3 months.
