Time for a snack? I don’t know if your like me but when my family wants a snack, muffins come to mind. I just naturally get out the mixing bowl and look to see what I have in the house.
There are always banana’s on our counter , ripe and ready for muffins or bread and they are the first muffins I think of when we want a quick , easy and delicious snack.
Making these muffins more healthy and dairy free is easy when using wholesome ingredients like einkorn flour, coconut oil and pure maple syrup for that added sweetness. Banana’s have a lot of their own natural sweetness, so these muffins don’t need a lot of added sugars and dairy free chocolate chips give these banana muffins even more yumminess!

INGREDIENTS NEEDED TO MAKE THESE YUMMY MUFFINS
1 1/2 cups einkorn flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pure maple syrup
1/2 cup melted coconut oil
2 eggs
2 large very bananas
1/2 cup chocolate chips ( dairy free)
HOW TO PUT THESE MUFFINS TOGETHER
1. In a large mixing bowl add flour, baking soda, and salt. Whisk well until all combined.
2. In a small mixing bowl add syrup , melted coconut oil , eggs and mashed bananas. Mix well and add to dry ingredients.
3. Add chocolate chips( dairy free)
4. Line muffin pan with baking tins and preheat oven to 350F.
5. Fill muffin cups 3/4 way full with batter.
6 Bake for 20-25 minutes or until toothpick inserted comes out clean.
Let muffins rest on cooling rack for 10-15 minutes and enjoy!
These muffins can be stored in am air tight container on the counter for 2-3 days and in refrigerator up to a week.
Perfect for a quick breakfast, afternoon snack and for packing in school lunches.
