Craving a chocolate snack? Banana Oatmeal Chocolate Chip Bars are a favorite in our home and bananas are a staple , always a bunch sitting on the counter just waiting for a good snack to be made. I think i can make these bars in my sleep , we make them so much and there have been many times , I whipped these up in the morning and they were done and ready to pack in the school lunch.
Bananas, oats, maple syrup and coconut oil , all healthy ingredients , so no guilt in snacking on these chocolate bars. Using a good quality chocolate in moderation is ok too. Banana Oatmeal Chocolate Chip bars are a yummy snack that can be made allergy friendly by making sure the oats are gluten free and adding an egg substitute if allergic to eggs.
Our family has a dairy allergy , so we use coconut oil , but olive oil, butter or a vegan butter can be used as an alternative. I have added peanut butter for a little extra protein, which gives these Banana Oatmeal Chocolate Chip bars a nice nutty flavor.
Ingredients
1 cup rolled oats
1 cup all purpose flour( we use einkorn flour)
1 tsp baking soda
1 tbsp cinnamon
1/4 tsp sea salt
1/3 cup maple syrup
1/3 cup melted coconut oil
2 large overripe bananas
1 egg
1/2 cup chocolate chips( we use Enjoy Life)
How To Make Banana Oatmeal Chocolate Chip Bars
In a large mixing bowl , add flour, oats, baking soda, salt and cinnamon.
Making a well in the dry mixture, add maple syrup , melted coconut oil, egg and mashed banana.
Combine well with dry ingredients.
Add chocolate chips and lightly fold ingredients together.
Pour into well oiled baking dish or line baking dish with parchment paper.
Bake for 20-25 minutes or until brown and toothpick comes out clean.
Let cool for 10 minutes and cut into bars.
These Banana Oatmeal Chocolate Chip Bars can be stored in an airtight container on counter for 3-5 days and frozen for up to a month.
These make the perfect snack for any time of day , packed in a lunch , or topped with some yummy coconut cream whip topping.
